Karashi Mentaiko

Menbei
Thin, addictive rice crackers infused with mentaiko flavour — crispy, slightly spicy, and intensely umami. Manufactured by Fukuya, one of Fukuoka’s oldest mentaiko makers, Menbei come in original and flavoured variants (squid, mayo, cheese). The distinctive packaging with its chilli-red graphic makes them easy to spot.

Hakata Ramen (Tonkotsu)
Fukuoka is the undisputed capital of tonkotsu ramen — a rich, creamy pork-bone broth that has conquered the world. The Hakata style uses ultra-thin straight noodles (much thinner than elsewhere), and you can order extra noodles (kaedama) for just ¥100 more. The best bowls are found at local chain Ichiran and legendary small shops.

What is the best way to eat at yatai stalls?
Just walk up and ask if there’s a seat — most yatai have 6–10 counter seats. No reservations needed. Point at dishes you want, or simply order ‘the usual’ (oishinpukai mono) and trust the chef. Budget around ¥3,000 per person including drinks. Cash preferred but some accept cards now.
